When we say "traditional", we really mean "traditional". Sue Chidester, farm-to-table baker, renders her own lard for her pie crusts (just like bakers did generations ago before Crisco was invented in 1911.) 

While you will not render lard during this hands-on workshop, you will successfully craft savory hand-pies, rustic tortes and a double-crust pie. Sue takes the mystery out of pie making, and in a friendly and relaxed manner, provides simple, straightforward instructions to make basic flaky pastry; roll pastry properly; crimp crusts and make "pretty pies".  Discuss lattice top pies, crumb crusts, savory and fruit fillings, cream pies, and more! Receive multiple [almost] fool-proof recipes, including Sue's proprietary rustic apple pie recipe.

Take a break from baking and enjoy a delicious lunch of savory hand-pies (that you will make yourself), and sweet rustic tortes (also made by you!) 

We provide all of the necessary ingredients and we will be delighted to offer you a glass of Washington wine to enjoy by the fire at the end of the day. 

At the end of this workshop, you will go home with a complete, ready-to-bake apple pie. Enjoy it right away, save it in the freezer for a special night, or show off your pie prowess at the next holiday meal. A high-quality pie baking "tool kit" is included in your fee (marble rolling pin, glass pie pan and recommended pastry blender).

Sue Chidester is a Heritage Skill connoisseur. She raises poultry, grows produce & preserves her garden bounty, and has raised dairy goats, producing and selling luxurious goat's milk soap. Sue is a beloved instructor at REC Retreats, having taught soap making,  bread baking and cheesemaking.
