This class will provide a thorough introduction to food preservation through pressure canning. Preserving food this way is wonderful for many reasons, but one should be well-prepared and well-educated to can safely.

For example, did you know that one should check pressure canner dial gauges annually for accuracy? Gauges that read high cause under-processing and may result in unsafe food.

Did you know that there is a difference between pressure cookers and pressure canners? It is not safe to preserve food using the smaller pressure cooker because the heating-cooling time will be too short to ensure safe food (even if you follow the recommended times.)

Did you know that acidity levels have changed in tomatoes over time and are now very close to the safety borderline of acidity? Precautions should be taken when canning tomatoes that may not have been necessary generations ago.

Learn pressure canning from a certified Master Food Preserver and participate in a hands-on session of food preservation using a dial gauge pressure canner. Take home new skills and a jar of freshly preserved something*.

*Because we will be selecting the very best produce available at the time of this class, we will not select a recipe until the ‘last minute’. For this reason, individual food allergies and sensitivities cannot be accommodated during this class.
