For example, did you know that one should check pressure canner dial gauges annually for accuracy? Gauges that read high cause under-processing and may result in unsafe food.
Did you know that there is a difference between pressure cookers and pressure canners? It is not safe to preserve food using the smaller pressure cooker because the heating-cooling time will be too short to ensure safe food (even if you follow the recommended times.)
Did you know that acidity levels have changed in tomatoes over time and are now very close to the safety borderline of acidity? Precautions should be taken when canning tomatoes that may not have been necessary generations ago.
